Chinese Eggplant is a long, slender purple variety of aubergine with thin skin, very few seeds, and a mild, slightly sweet flavour that is less bitter than round eggplant varieties. Its tender texture makes it ideal for quick stir-fries, grilling, and braising in sauces. In Chinese cooking it features in garlic sauce stir-fries and steamed eggplant with soy. In Indian cooking it works beautifully in Baingan Bharta, stuffed brinjal curry, and dry masala preparations. It absorbs flavours and sauces deeply for rich, satisfying results.
